Description
These S’mores Brownies combine fudgy chocolate brownies with gooey marshmallows, crunchy graham crackers, and melted chocolate for the ultimate campfire-inspired dessert.

For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
For the Brownie Layer:
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
For the Topping:
- 1 ½ cups mini marshmallows
- ½ cup milk chocolate chips (or chopped chocolate)
- 2 graham crackers, broken into pieces
Instructions
Preheat & Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture firmly into the bottom of the pan.
- Bake for 8 minutes, then remove from the oven.
Make the Brownie Batter:
- In a large bowl, whisk melted butter and sugar until smooth.
- Add eggs and vanilla extract, mixing until combined.
- Stir in cocoa powder, flour, salt, and baking powder until just combined.
- Pour the brownie batter over the graham cracker crust and spread evenly.
Bake the Brownies:
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Add the Toppings:
- Sprinkle mini marshmallows, chocolate chips, and graham cracker pieces on top of the brownies.
- Return to the oven and bake for another 3-5 minutes, until marshmallows start to puff and turn golden.
- Optional: For a toasted marshmallow effect, broil for 1-2 minutes (watch closely!).
Cool & Serve:
- Let the brownies cool in the pan for at least 15 minutes before cutting.
- Slice, serve, and enjoy!
Notes
- For extra fudgy brownies, slightly underbake them.
- If you don’t have mini marshmallows, use large marshmallows cut into halves.
- Try using dark chocolate for a richer taste!
- Store leftovers in an airtight container at room temperature for up to 3 days.
