Ingredients

Scale

For the Meatloaf:

  • 1 ½ lbs ground beef
  • ½ cup breadcrumbs
  • 1 small onion, finely diced
  • 1 small green bell pepper, finely diced
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 eggs
  • ½ cup milk
  • 1 ½ cups shredded provolone or mozzarella cheese

For the Topping:

  • ½ cup ketchup (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  • Preheat oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  • Sauté vegetables: In a skillet over medium heat, cook onions and bell peppers for 3-4 minutes until soft. Remove from heat and let cool slightly.
  • Mix the meatloaf: In a large bowl, combine ground beef, breadcrumbs, Worcestershire sauce, garlic, salt, pepper, Italian seasoning, eggs, and milk. Add in the sautéed vegetables and mix well.
  • Layer with cheese: Press half of the meat mixture into the loaf pan, sprinkle with half the cheese, then add the remaining meat mixture on top.
  • Add topping: Mix ketchup with garlic powder and onion powder, then spread over the meatloaf (optional).
  • Bake for 45-50 minutes or until internal temperature reaches 160°F (71°C).
  • Add more cheese: Sprinkle the remaining cheese on top and bake for another 5 minutes until melted.
  • Rest & Serve: Let the meatloaf rest for 10 minutes before slicing. Enjoy!

Notes

  • Swap provolone for mozzarella or Swiss cheese for a different flavor.
  • Add mushrooms for an extra Philly cheesesteak touch.
  • Serve with mashed potatoes or crusty bread for a full meal.
