- 4 large potatoes, peeled and thinly sliced
- 3 eggs, beaten
- 1 small onion, finely chopped
- 2 tbsp olive oil or melted schmaltz
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika (optional)
- 2 tbsp matzo meal (optional, for texture)
Instructions
- Preheat the oven to 375°F (190°C). Grease a baking dish with oil.
- Prepare the potatoes: Peel and thinly slice the potatoes.
- Mix the ingredients: In a large bowl, combine the potatoes, beaten eggs, chopped onion, oil, salt, pepper, garlic powder, and paprika. Stir well.
- Layer and bake: Spread the mixture evenly in the greased baking dish. Sprinkle matzo meal on top if using.
- Bake for 45–50 minutes, or until the top is golden brown and crispy.
- Serve warm as a side dish or main course.
Notes
- For extra flavor, add sautéed mushrooms or fresh herbs.
