  • 1 ¼ cups (300ml) lukewarm water
  • 1 tsp salt

  • 1 tbsp olive oil

For the Tomato Sauce:

  • 1 can (400g) San Marzano tomatoes (crushed)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp sugar
  • 1 clove garlic, minced
  • ½ tsp dried oregano

For the Toppings:

  • 200g (7oz) fresh mozzarella (preferably mozzarella di bufala)
  • Fresh basil leaves
  • Extra virgin olive oil

Instructions

Step 1: Make the Dough

  1. In a bowl, dissolve the yeast and sugar in warm water. Let it sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix and knead the dough for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm place for 2 hours (or until doubled in size).

Step 2: Prepare the Sauce

  1. In a bowl, mix the crushed tomatoes, olive oil, salt, sugar, garlic, and oregano. Let it rest for 30 minutes for the flavors to develop.

Step 3: Shape and Bake the Pizza

  1. Preheat your oven to 250°C (480°F). If using a pizza stone, place it inside the oven while preheating.
  2. Divide the dough into two portions. Roll each portion into a thin round shape (about 10–12 inches).
  3. Transfer the dough onto a baking sheet or pizza peel dusted with flour.
  4. Spread a thin layer of tomato sauce over the dough, leaving a small border. Tear the mozzarella and place it evenly on top.
  5. Bake for 7–10 minutes until the crust is golden and crispy.
  6. Remove from the oven, top with fresh basil leaves, drizzle with olive oil, and serve hot!

Notes

  • For a Neapolitan-style pizza, use a pizza stone and preheat it for at least 30 minutes.
  • If you don’t have 00 flour, you can substitute all-purpose flour, but the texture may be slightly different.
  • Fresh mozzarella has high moisture, so drain it well before using.
  • If you have a pizza oven, bake at 400°C (750°F) for about 90 seconds for the best results.
