For the Dough:
- 3 ½ cups (450g) 00 flour (or all-purpose flour)
- 1 ¼ cups (300ml) lukewarm water
- 1 tsp salt
- ½ tsp sugar
- 1 packet (7g) dry yeast (or 25g fresh yeast)
- 1 tbsp olive oil
For the Tomato Sauce:
- 1 can (400g) San Marzano tomatoes (crushed)
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp sugar
- 1 clove garlic, minced
- ½ tsp dried oregano
For the Toppings:
- 200g (7oz) fresh mozzarella (preferably mozzarella di bufala)
- Fresh basil leaves
- Extra virgin olive oil
Instructions
Step 1: Make the Dough
- In a bowl, dissolve the yeast and sugar in warm water. Let it sit for 5–10 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix and knead the dough for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm place for 2 hours (or until doubled in size).
Step 2: Prepare the Sauce
- In a bowl, mix the crushed tomatoes, olive oil, salt, sugar, garlic, and oregano. Let it rest for 30 minutes for the flavors to develop.
Step 3: Shape and Bake the Pizza
- Preheat your oven to 250°C (480°F). If using a pizza stone, place it inside the oven while preheating.
- Divide the dough into two portions. Roll each portion into a thin round shape (about 10–12 inches).
- Transfer the dough onto a baking sheet or pizza peel dusted with flour.
- Spread a thin layer of tomato sauce over the dough, leaving a small border. Tear the mozzarella and place it evenly on top.
- Bake for 7–10 minutes until the crust is golden and crispy.
- Remove from the oven, top with fresh basil leaves, drizzle with olive oil, and serve hot!
Notes
- For a Neapolitan-style pizza, use a pizza stone and preheat it for at least 30 minutes.
- If you don’t have 00 flour, you can substitute all-purpose flour, but the texture may be slightly different.
- Fresh mozzarella has high moisture, so drain it well before using.
- If you have a pizza oven, bake at 400°C (750°F) for about 90 seconds for the best results.
