- ½ cup vanilla protein powder
- ½ cup peanut butter (or almond butter)
- ¼ cup honey (or maple syrup)
- 1 tsp vanilla extract
- 2 tbsp milk (or non-dairy alternative)
- ½ cup white chocolate chips (for coating)
- 1 tsp coconut oil
- Mini chocolate chips or black icing (for ghost eyes & mouth)
Instructions
- In a mixing bowl, combine oats, protein powder, peanut butter, honey, vanilla extract, and milk. Mix until a thick dough forms.
- Roll the mixture into small bite-sized balls and place them on a parchment-lined baking sheet.
- Freeze the balls for 15-20 minutes to firm up.
- Melt white chocolate chips with coconut oil in the microwave in 30-second intervals, stirring in between.
- Dip each protein ball into the melted white chocolate to coat it completely. Let excess chocolate drip off before placing back on the baking sheet.
- Use mini chocolate chips or black icing to create ghost eyes and a mouth on each coated ball.
- Let them set in the fridge for about 10-15 minutes until the coating hardens.
