Ingredients
Scale
For the Dough:
- 3 ½ cups (440g) bread flour
- 1 ½ teaspoons salt
- 2 teaspoons instant yeast
- 2 tablespoons granulated sugar
- 1 cup (240ml) warm water
- ¾ cup fresh or frozen blueberries
For Boiling:
- 2 quarts (8 cups) water
- 2 tablespoons honey (or sugar)
For Topping (Optional):
- 1 egg white (for egg wash)
- Sesame seeds or coarse sugar
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine bread flour, salt, sugar, and yeast.
- Gradually add warm water while mixing until a dough forms.
- Gently fold in blueberries, being careful not to crush them too much.
- Knead the dough on a floured surface for about 8–10 minutes until smooth.
- Place the dough in a lightly greased bowl, cover, and let it rise for about 1 hour or until doubled in size.
Step 2: Shape the Bagels
- After rising, punch down the dough and divide it into 8 equal pieces.
- Roll each piece into a ball, then poke a hole in the center with your fingers to form a bagel shape.
- Place them on a parchment-lined baking sheet, cover lightly, and let them rest for 10 minutes.
Step 3: Boil the Bagels
- Bring 2 quarts of water to a boil and add honey (or sugar) for a slight sweetness.
- Carefully drop bagels into boiling water (2-3 at a time) and boil for 30–45 seconds per side.
- Remove with a slotted spoon and place back on the baking sheet.
Step 4: Bake the Bagels
- Preheat the oven to 400°F (200°C).
- If using an egg wash, brush it over each bagel and sprinkle toppings if desired.
- Bake for 20–25 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Fresh blueberries may bleed into the dough, turning it slightly purple.
- Frozen blueberries should be added directly without thawing to prevent excess moisture.
- For extra chewiness, boil bagels for up to 1 minute per side.
- Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
