Description

For the Dough:

  • 3 ½ cups (440g) bread flour
  • 1 ½ teaspoons salt
  • 2 teaspoons instant yeast
  • 2 tablespoons granulated sugar
  • 1 cup (240ml) warm water
  • ¾ cup fresh or frozen blueberries

For Boiling:

  • 2 quarts (8 cups) water
  • 2 tablespoons honey (or sugar)

For Topping (Optional):

  • 1 egg white (for egg wash)
  • Sesame seeds or coarse sugar

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine bread flour, salt, sugar, and yeast.
  2. Gradually add warm water while mixing until a dough forms.
  3. Gently fold in blueberries, being careful not to crush them too much.
  4. Knead the dough on a floured surface for about 8–10 minutes until smooth.
  5. Place the dough in a lightly greased bowl, cover, and let it rise for about 1 hour or until doubled in size.

Step 2: Shape the Bagels

  1. After rising, punch down the dough and divide it into 8 equal pieces.
  2. Roll each piece into a ball, then poke a hole in the center with your fingers to form a bagel shape.
  3. Place them on a parchment-lined baking sheet, cover lightly, and let them rest for 10 minutes.

Step 3: Boil the Bagels

  1. Bring 2 quarts of water to a boil and add honey (or sugar) for a slight sweetness.
  2. Carefully drop bagels into boiling water (2-3 at a time) and boil for 30–45 seconds per side.
  3. Remove with a slotted spoon and place back on the baking sheet.

Step 4: Bake the Bagels

  1. Preheat the oven to 400°F (200°C).
  2. If using an egg wash, brush it over each bagel and sprinkle toppings if desired.
  3. Bake for 20–25 minutes until golden brown.
  4. Let cool slightly before serving.

Notes

  • Fresh blueberries may bleed into the dough, turning it slightly purple.
  • Frozen blueberries should be added directly without thawing to prevent excess moisture.
  • For extra chewiness, boil bagels for up to 1 minute per side.
  • Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.
